Inside the Pastrami Kit
- Pastrami Brine (9.5 oz) a classic pickling brine made with kosher salt, dark brown sugar and a blend of warm, aromatic spices. Mix the full pouch with 1 gallon (16 cups) of warm water. Brine times: beef 5-7 days, pork and poultry 3-5 days, smaller cuts and seafood 1-2 days.
- Pastrami Rub (3.9 oz) bold, salt-free coating made with coarse black pepper, coriander seeds, mustard seeds, coconut palm sugar, smoked paprika and garlic. Since the brine does the salting, this rub is all about crust, the kind of crust that makes people stop mid-bite.
